Get your dose of Vitamin M!

Today’s spotlight hails from Kingston, Jamaica! I tease Gabrielle all the time because I seriously don’t know what she can’t do. Read how she’s managed to escape to her creative side while still working in the hardworking medical field.

Growing up, I always wanted to be a Doctor (Obstetrician) and do Art on the side. I eventually realized that even though the income would be great after the initial struggle of paying off a hefty student loan, I would not have the time on my hands that I would desire to be the Free Spirit that I am. I still entered the field of Health Care as a Radiologic Technologist. It’s a skill and I enjoy the field. But it wasn’t enough for me as a young adult who just started working in 2010, that used to be the President of at least 2 service Clubs, while sitting on the committee of others, also engaging in modern dance and other sporting activities. I felt like I also started life 3 years behind my high school peers who did not do a 2nd Degree and who were fortunate enough to have their parents pay their way through tertiary education for them. While I had not one, but two degrees worth of Student Loans.

My walls were empty when I moved out on my own into my apartment and I said, ‘Why buy paintings when I can paint them myself?’. I officially started my company, GW Art with seasonal Collections, that has grown so much since then and still has some way to go.
I started to help a friend train her Boot camp (aerobics) class in 2011 too. She had to leave the country for a year and I did so well administering and training classes that I eventually branched out on my own. I got certified in both Personal Training and Sports Nutrition. After a timid start to do this on my own, I thrived by seeing positive results in my clients and being a part of and changing person’s lives. I am now confident and in demand in the Fitness Industry in Jamaica.

I currently find ways to express my 3 fields along with Hobbies, which include Restaurant Reviews, Sports and more on my Website, www.sugalifestyle.com. This continuously inspires me and makes me feel like I can branch out even more! #blackentrepreneurship #blackexcellence

Suga’s Healthy Salmon, Pesto Pasta and Homemade Creamy Sauce!

Enjoy Restaurant Style Salmon at home like Suga!

Ingredients

2 Salmon Fillets
Salt
Black Pepper
Olive Oil
Ashebre’s Spicy Dairy-Free Basil Pesto
Gluten-free/Whole Grain Thin Spaghetti
Cherry Tomatoes (Sliced)
Fat-Free Philadelphia Cream Cheese/Low-fat Greek Cream Cheese
Onion
Garlic powder
Grated Parmesan Cheese
Almond milk/Skimmed milk

*I didn’t get the chance to purchase Capers, but for those who like Capers with Salmon, it is not needed with the strong taste of Ashebre’s Spicy Dairy-Free Pesto sauce

*Ashebre’s Spicy Dairy-Free Pesto can be sourced at John R. Wong Supermarket, Kingston Ja

Method (Serves: 2)

Salmon Fillets

1. Tilt the Salmon fillet up/Lift and bend it to make several slits on the skin side of the Salmon with a very sharp knife. (This makes the Salmon cook quicker, the skin crispier and does not let the Salmon curl up in the heat)

*Don’t slice too deep or you will overcook the Salmon

2. Season the Salmon with Salt and Black pepper

3. Lightly grease frying pan with Olive oil over medium heat

4. Place Salmon fillets in pan skin side down to prevent overcooking

3. Look out for a distinct white line in the middle of the fillet at about 3 to 5 minutes, depending on the thickness of the Salmon. When you see it, the Salmon is cooked halfway through

4. Flip the Salmon and cook for another 3-5 minutes until the skin is crispy.

5. Turn off the heat, cover the pan and steam your Salmon for about 10 minutes to be cooked medium. Add an extra 2-3 minutes to cook medium-well.

Pasta

1. Cook Thin Spaghetti until tender and drain in coriander.

2. Add sliced Cherry tomatoes and mix in some of Asbebre’s Spicy Dairy-free  Pesto Sauce.

Creamy Sauce

Make your own healthy version of a Creamy Sauce instead of using an Alfredo sauce or Coconut cream sauce to put on your Fish or your Pasta.

Melt olive oil, garlic powder, onion, cream cheese, grated parmesan cheese and almond/skimmed milk in a pot, with varying amounts to create your desired consistency.

Plating

Plate Spaghetti with Salmon fillet on top. Add a little Pesto sauce to the Salmon and layer your homemade creamy sauce on top. Yum!

Healthy and Savoury Yam Toast topped with Avocado for Breakfast!

If you’ve been eating Whole Wheat, Whole Grain or Gluten-free Bread since the start of 2018 and you would like a change, then this is the Recipe for you!

You could be a Vegetarian looking for an exciting new Recipe too.

Ingredients

1 Yam (Complex/Good Carbs)

1/2 Avocado (Healthy Fats)

1 tsp Hemp/Sesame seeds (Protein)

Asparagus (Vegetables)

Olive Oil (Optional)

A sprinkle of Garlic Salt (Optional)

A sprinkle of Black Pepper (Optional)

A pinch of Pink Himalayan Sea Salt

Method

Yam Toast

● Cut 1 large Yam into even slices (around 2cm thick)

● Place in the Oven at 220°C for 30 minutes OR Place on a Grill for 30 minutes on each side on medium-high heat

Roasted/Steamed Asparagus *(Edited by Gabrielle Burgess)

Roasted:

● Preheat oven to 220 °C

● Place the Asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with garlic salt, and pepper

● Bake in the Pre-heated oven until just tender, 12 to 15 minutes depending on thickness.

Steamed:

● Fill a skillet with ½ cup of water per ½ pound of Asparagus and Add the Asparagus.

● Cover the skillet with a lid and Boil over medium-high heat for about 5 minutes or until the Asparagus turns bright green and tender.

Avocado/Avocado Puree *(Edited by Gabrielle Burgess)

● Mash the Avocado with a fork or puree in a blender until smooth, adding water if necessary to reach desired consistency

● Top off the Yam slices with Avocado, Hemp/Sesame seeds, Asparagus and a pinch of Pink Himalayan Salt.

Benefits

A Fibre and Protein-rich Breakfast with Veggies and Healthy Fats all at the sane time!

Oven Roasted Plantains stuffed with Black Beans, Pepper Jack Cheese and Cilantro Sauce

This is a smart, tasty and spicy idea for a Meatless Monday! Awesome way to switch things up for the Vegetarian diet. Note that the Black Beans provide additional fiber.

To go completely healthy, you can substitute the Pepper Jack Cheese with Borden’s Fat-Free Pepper Jack Cheese that can be found at Wal-Mart or with another spicy, flavourful Fat-Free Cheese of your choice based on availability.

Healthy Breakfast Frittata Recipe from Suga!

Breakfast Frittata by Suga aka Gabrielle Burgess

Ingredients

4 eggs
1/4 cup almond milk/skimmed milk
1/4 tsp. salt
1 medium tomato (chopped)
1 tsp. escallion (chopped)
1/4 tsp. oregano
black pepper
3/4 cup cooked callaloo ***(Rich in Iron, Calcium and Vitamin B12)
1/2 cup Kraft fat-free shredded mozzarella cheese

N.B. The more eggs you add, the thicker the Frittata

Instructions

● Preheat the oven to 400°F.
● Spray skillet with cooking spray and set aside.
● In a bowl, whisk the eggs, salt, a dash of black pepper, 1/4 tsp. oregano and almond milk/skimmed milk.
● Add chopped escallion, tomato, cooked callaloo and half of the cheese. Stir, then whisk to combine mixture.
● Pour mixture into prepared skillet and sprinkle the other half of the cheese on top.
● Bake for 15-20 mins, then remove from oven and allow to cool for 5 mins.
● Slice then serve!

Suga’s Healthy Pesto Pizza Recipe!

Suga finally got her hands on Ashebre Gourmet Condiments’ Spicy Basil Pesto sauce. Ashebre Gourmet Condiments is from Ashebre, The Virtual Restaurant led by local Executive Culinary Artist, Oji Jaja.

Now and then you will see a few stocked in Loshusan Supermarket. I glimpsed it somewhere else too, but the location has slipped from my memory.

I was happy with how long Ashebre’s 10oz Spicy Basil Pesto lasted. I made Chicken and Shrimp Pesto Pasta for two, as well as 5 mini Pesto Pizzas made from Whole Wheat Pita Bread over two weekends.

My husband and I enjoyed it. It is one of the healthiest Pestos that I have seen on the market with only 10% Saturated Fat and I loved and appreciated that it wasn’t drenched in Olive oil. It was dairy free and fresh with it’s own unique herby, taste.

Other Jamaican Branded Pestos that are #sugaendorsed are Christina Simonitsch’s Pesto from Simo’s Bread and Catering, who is currently away to return September and none other than, Stush in the Bush’s Pesto.

If you get your hands on any of their Pestos, be sure to try my Recipe for your Personal Chicken Pesto Pizza!

Ingredients

Whole Grain Pita bread
Ashebre Gourmet Condiments Spicy Basil Pesto
Skinless, Boneless strips of Chicken Breast
Jerk seasoning
Garlic powder
Paprika
Black pepper
Mrs. Dash Extra Spicy Salt-Free seasoning blend
Shredded Low-Moisture Part-Skim Mozzarella Cheese (15% Sat. Fat)                                              Tomato
Onion
A few leaves of fresh Basil
***Add a few leaves of Fresh Arugula! Suga couldn’t find any at the time

Instructions:

1. Prepare the Oven-Baked Skinless, boneless strips of Chicken Breast.

Pre-heat the oven to 350 °F.

Season the Chicken with Jerk seasoning, Garlic powder, Paprika, Black pepper and Mrs. Dash Extra Spicy Salt-Free seasoning blend.

Bake the Chicken for about 12 to 15 mins (depending on your oven and the thickness of the Chicken Breast), ensuring that you flip sides along the way until juices run clear and it remains tender.

Leave strips to cool for about 5 minutes, then cut up into smaller pieces.

2. As the Chicken is baking, prep your Pizza

Spread the Pesto sauce evenly on the the Pita Bread.

Add Cheese, Onion and chopped Tomato.

3. After the Chicken has cooled for about 5 minutes and it is cut into smaller pieces, turn up the oven to 400°F.

4. Place the layered Pita Bread in the Oven and as the Cheese begins to melt, add the Chicken and sprinkle a bit more Cheese on top.

Watch until it melts, then remove the Pizza from the oven. It just takes a few minutes!

Garnish with a few fresh Basil leaves and Arugula.

Slice it with a Pizza Cutter then Serve!

I have been following Angela Davis on Instagram, who is a self-taught home cook, recipe developer, private chef and author located in Maryland, D.C.

She had a Sunday Dinner Party two weekends ago, titled ‘Christmas in July’. It was also hosted by Clinton Mitchell and his wife. There were 12 guests, who were a mixture of followers, friends and clients that hit it off quickly and had rave reviews, using the hashtag, #KitchenistaSundays on Instagram.

The Dinner was the Feast of 7 Dishes with an Italian Seafood theme. The prelude included Crostinis with anchovy butter and radishes, an Italian Seafood salad, a Vegetable salad and stuffed Clams.

A slow roasted pistachio crusted Salmon followed for the main course. A guest said it was the best Salmon they have ever had.

All of that was topped off with Roasted figs along with whipped goat cheese and a Lemon Olive Oil Cake.

Roast Chicken Breasts with Spiced Cauliflower & Green Romesco!

Here is the ‘Suga Modified’ version of sunbasket.com’s recipe for Roast Chicken Breasts with Spiced Cauliflower and Green Romesco:

Suga’s Tip: If you have any left over Romesco, serve it on your morning whole wheat/grain toast with a boiled egg.

Instructions:

1. Prep the Cauliflower

Heat oven to 425°F.

Cut the Cauliflower into 1-inch florets, discarding any leaves or thick stalks.

Combine the Cauliflower, paprika and 2 tsp. Olive oil. Season with salt and pepper, then toss.

2. Roast the Chicken and Cauliflower

*Ensure you spread the Cauliflower in an even layer beside the Chicken on the sheet pan

Roast until the Chicken is cooked through, then transfer to a plate and rest.

Continue roasting the Cauliflower until browned and tender, perhaps for an additional 6-8 minutes.

Return Cauliflower to bowl where it was tossed to cool slightly.

3. Cut and Cook Scallions

Cut and cook Scallions into 1-inch lengths and cook until charred for 3-4 minutes, then transfer to a plate.

4. Finish Cauliflower

Add Scallion, Parsley and Olives to the roasted Cauliflower and stir to combine.

Add a bit more salt and pepper.

5. Serve

Add the green Romesco and top with the Chicken, then serve Cauliflower and remaining Romesco on the side.

For a fun, healthy Quinoa Salad, try the following:

● Quinoa as your base

● Cherry Tomatoes

● Black Olives

● Black Beans

● Kidney Beans

● Cauliflower

● Coriander

*** You can add a light, olive oil-based vinaigrette and squeeze a touch of lemon or lime juice for a touch more flavour and freshness
