TGIF was an understatement. Thank you Rainforest Caribbean and the Award-Winning Chef Volae Williams and his team at ROK Hotel Kingston by the ROKStone Grill for a spectacular Seafood Buffet Experience spanning about 7 stations.
– My targeted, ‘meaty’ Jerked Octopus with adequate heat from scotch bonnet citrus herbed butter – Hubby’s fave, Ceviche by the Raw Bar was on point – Enjoyable selection of traditional and Jamaican rolls by the Sushi and Nigiri station – The Mixed Seafood Pasta! I’m gonna tell you about it! – The Strawberry Macaroons and rich Chocolate Log Cake were perfection. Definitely worth the calories.
Chef Volae told Suga they made a special effort to bring out the taste of the flavour of Rainforest Caribbean’s Seafood and of course you can’t do that by piling on a sauce. So hubby and I definitely appreciated their mixed seafood tossed in fettuccine with sundried tomatoes in a very light Mondavi Wine, butter and garlic sauce. Surely the Fit Happens with Gabby way. Nailed it!
All you can eat for J$10,000 with a live band and wait staff that we gave an A for effort. This experience was definitely value for money, especially as we continuously strive to revive Downtown, Kingston.
Same time, same place each month Chef Volae, ROK Hotel Kingston and Rainforest Caribbean? We’ll see!

Want to Enjoy Easter, but stay on your Fitness Mission?
Easter Brunch or Dinner can feel just as special at home as they would at a restaurant with a little planning and prep.
Try these Dishes in the Kitchen:
1. DEVILED EGGS An Easter classic. Great brunch side or appetizer.
Use hot or mild pepper sauce, try dill or a sweet pickle relish, use fat-dree mayo and add a sprinkle of fresh Chives for more flavor.
2. Not a Deviled eggs fan? Try SPINACH AND MUSHROOM QUICHE or one of my faves, a CALLALOO FRITTATA.
Ensure you use unsweetened Almond milk and a low fat cheese such as a part skim mozzarella.
3. VEGGIE SIDES
Take advantage of seasonal flavors and root vegetables to add colour nutritional value to your Easter table. Root vegetables include carrots, parsnips, beets, red onion and sweet potato.
4. CORIANDER AND LEMON CRUSTED SALMON with Asparagus Salad and Poached Egg
5. CARROT CAKE OR YOUR OWN VEGETARIAN EASTER BUN!
Use whole-wheat or spelt flour (hulled, purer wheat), Unsweetened Almond milk, Cinnamon and Agave to sweeten instead of sugar.
If you aren’t Vegetarian, please also cook or bake with Olive oil or Vegetable oil, not Coconut oil. We will leave that debate for after Easter. 🙂

Where are you dining this weekend? It’s our first Post Covid Christmas and everyone is busy, out and about!
My Christmas dining experience was made when one of our Faves, Summerhouse located in Harmony Hall, Ocho Rios came to Kingston last weekend with a Yuletide Grill Prix Fixe Menu at 10 West Kings House Road.
With visiting Chef Bill Clark (Ig:@frombilClark) joining them in the kitchen, Appetizers and mains rolled out in a timely manner and service was excellent, as Beverages flowed as well.
Ordering their Saltfish Fritters was a must! They are like dumplings! Their Smoked Marlin Dip with homemade chips, a treat as well.
Their Charred Drunken Beef was perfection and indeed left me with a drunken feeling of satisfaction all evening.
Hubby, Randy enjoyed the Grilled Lobster with scotch bonnet sambal, coconut, saffron and turmeric. I meaaan, when he hardly wants to give me a 2nd bite, you know it’s fantastic.
The sides of Kale and Roast Pumpkin salads were absolutely delightful. Not sure how the misfit of Fries emerged, but looks like we missed out on the Holiday Fattoush Crispy Bread. We had no space for it anyhow.
A mouthwatering Brownie with a taste of Coffee Ice cream was the Finale to our feast and a fabulous Sunday leading up to Christmas.

U usher us to our seats and take us through the Menu they are well versed on and ensure we get some water. Update us on specials. Make recommendations.
G Ive us some time, but not too much time to peruse the Menu.
A ttend to us throughout our stay. Update us on service time, ask for feedback. Show us you care. Tell us your name again and express that you hope to see us again. Gives us a feel of accountability and reason to return
L ook Professional. Look the part and play the part. If you have our reservation, or we come more than once, call us by our name.
STAFF RETENTION
1. Monetary Staff compensation
On the spot scenarios when hiring. Train staff and include scenarios. Ensure you are trained first.
COMMUNICATE with staff often, keeping all updated, equipping them with info and authority to say yes more to certain scenarios, show initiative, letting us know that you are willing to go the extra mile. Be present or available if they are not sure and need to check with you.
RESPECTFUL TREATMENT is important, especially to RUDE CUSTOMERS We are NOT always right. We believe we are though, so staff can still try to respect our position and do their best to cater to our wishes.
Exceed our expectations. We will remember it. Provide something extra for free that the customer wasn’t expecting.
Remember, we have a choice. It starts with YOU.
