How to make Easter Mini Cheesecakes!

Prep Time: 20 mins
Total Time: 3 Hours 20 mins (Don’t worry, it includes 2 hours chilling time in the fridge)
Servings: 18

Ingredients
– 1 cup Graham cracker crumbs
– 3/4 cup and 2 tbsp. Sugar, divided
– 3 tbsp. Butter or Margarine, melted
– 3 pkg. (8 oz. each) Philadelphia Cream Cheese, softened
– 1 tsp. Vanilla
– 3 Eggs
– 1 cup and 2 Tbsp. Baker’s Angel Flake Coconut, toasted
– 54 (3 per mini cheesecake) speckled malted milk eggs/Chocolate eggs

Method

1. Heat oven to 325°F.

2. Mix Graham crumbs, 2 tbsp. Sugar and Butter, then press onto bottoms of 18 paper-lined muffin cups.

3. Beat Cream cheese, Vanilla and remaining Sugar with mixer until blended. Add Eggs, 1 at a time, mixing on low-speed after each, just until blended.

4. Spoon mixture over crusts.

5. Bake 25 to 30 min. or until centers are almost set.

6. Cool completely. Refrigerate 2 hours.

7. Top each mini Cheesecake with 1 tbsp. coconut and shape to resemble bird’s nest. Add 3 malted milk eggs to each.

Don’t have the time?
Although cooking from scratch usually tastes better, you can get the Betty Crocker No-Bake Cheesecake Mix that includes the crumb base.

Here is how you buy less ingredients and cut 7 steps to 4!

Ingredients
– Betty Crocker Cheesecake Mix
– 90g melted Butter
– 400ml cold Whole Milk (or Almond Milk to cut down on the sat. fat)
– 1 cup and 2 Tbsp. Baker’s Angel Flake Coconut, toasted
– 54 (3 per mini cheesecake) speckled malted milk eggs/Chocolate eggs

 

Method
1. Blend biscuit crumbs with melted butter. Press into base of paper cup in pan.

2. Beat mix with milk in large bowl on low-speed until moistened. Scrape the bowl and beat on medium speed for 2 minutes until thick and creamy.

3. Spread on top of biscuit base. Put in fridge to chill for at least 2 hours.

4. Decorate with Coconut and Chocolate Eggs, and serve!

What is Endometriosis and how do you know if you have it?

It’s Endometriosis Month and we should all be aware that Endometriosis is a condition in which tissue similar to the lining inside the uterus, called the endometrium, migrates and grows outside of the uterus.

Cause

There is no known cause of Endometriosis, but it is highly likely that certain genes predispose women to develop the disease.

Symptoms of Endometriosis

Women may experience various pains, especially during menstruation, where it may be severe, but there are a variety of methods and treatments that can help to reduce the pain.

Excessive bleeding and infertility are other known symptoms.

How is Endometriosis Diagnosed?

The test to definitively diagnose Endometriosis is Laparoscopy. Laparoscopy is an operation performed in the abdomen or pelvis through small incisions with the aid of a camera. The laparoscope aids diagnosis or therapeutic interventions.

Diagnosis can also be made based on one’s clinical history.

Consult your Gynaecologist if you think you may have Endometriosis.

Wing Sauce Competition and Farmer’s Market this Saturday in Mona!

There are so many things happening this weekend! Not to worry though, if you schedule your time well, you can make it to all of the events.

Non-profit organization, New Kingston Rotaract Club (Youth arm of Rotary) is having their annual Wing Sauce Competition this Saturday, March 24th by the Mona Dam. However, this time they are also having a Farmer’s Market encouraging us to eat healthy and buy our local produce, while contributing to charity at the same time. It’s a win-win for everyone.

Judging and sampling usually takes place at about 2:30/3:00pm. Suga will be judging too!

So, after returning from the Jamaica Coffee Festival in Newcastle, you can make your way over to the Mona Dam. You can enjoy watching non-profit organizations battle to become the Wing Sauce Champs, probably sample a few tasty wings, buy some fresh, local produce and then head over to the National Stadium to see our Boys and Girls Champs. After all, the hot races are usually run in the late afternoon and evening.

You can then pat yourselves on the back for supporting Brand Jamaica, contributing to Charity and supporting our future in Education and Athletics all in one day. Scouts from some of the best colleges around the world will be at the National Stadium to watch and recruit our athletes.

The Community of Standpipe and Students of New Providence Primary get Free Dentals, Health Checks and more for a Day!

The University of Technology Jamaica, Department of Community Service and Development in association with the Rotary Club of Liguanea Plains hosted Papine Wellness Fest 2018 for members of the Standpipe Community last Thursday, March 1st at the New Providence Primary School.

Members of the Rotaract Club of Liguanea Plains and other volunteers also assisted with the Wellness Fest.

The students of New Providence Primary and other members of the Community were not only offered FREE Admission, but FREE Dental care, Medical and Eye examinations, Diabetes and Blood Pressure checks, as well as NIS, RGD and TRN Services.

Lunch from Chef Dave Paul!

I regretfully admit that I have had Chef Dave Paul’s contact information and Lunch menu from last summer and just decided to use it yesterday. Why? It’s so hard for me to decide what to eat, much less from the day before. I am also still working or just settling in by the time the order is to go in.

Last year, Lunch orders had to be in by 10pm the night before and currently, the deadline is even earlier. Orders need to go in to Chef by 8pm the night before. I am sure this is how he keeps his system structured, so it’s either you make it work for you or you don’t.

A set menu is used daily, which is updated from time to time. Customized lunch orders are welcomed. Customers have options of Seafood, Chicken, Pastas, Wraps, Salads and Vegetarian meals.

It is stated that Punctual delivery is not guaranteed. So even though I requested an 11:30am delivery, I stated that it could not be later than 12 noon. My lunch arrived at 12 noon.

Presentation and branding were impressive. Communication was also effective.

Chef Dave Paul’s Oven Roasted Chicken with Jerk BBQ sauce, a side of Sweet Potato and Pumpkin Mash and side Salad – $900JMD inclusive of Delivery in Kingston

I asked for light Jerk BBQ sauce and got just that. It gave the tender and well-seasoned Chicken a zesty flavour. The Sweet Potato and Pumpkin Mash was satisfactory. Sometimes healthy is boring and I took one of the healthier side options, so didn’t expect much from it as a side. The raw vegetables in the side Salad were fresh and I loved the added crunch and sweetness from a few cuts of gimbilyn (a.k.a carambola/star fruit) and raisins.

To top things off, lunch came with a moist towelette. I am guessing that Chef Paul knows that his Chicken was saucy and finger-licking good.

Get your dose of Vitamin M!

Today’s spotlight hails from Kingston, Jamaica! I tease Gabrielle all the time because I seriously don’t know what she can’t do. Read how she’s managed to escape to her creative side while still working in the hardworking medical field.

Growing up, I always wanted to be a Doctor (Obstetrician) and do Art on the side. I eventually realized that even though the income would be great after the initial struggle of paying off a hefty student loan, I would not have the time on my hands that I would desire to be the Free Spirit that I am. I still entered the field of Health Care as a Radiologic Technologist. It’s a skill and I enjoy the field. But it wasn’t enough for me as a young adult who just started working in 2010, that used to be the President of at least 2 service Clubs, while sitting on the committee of others, also engaging in modern dance and other sporting activities. I felt like I also started life 3 years behind my high school peers who did not do a 2nd Degree and who were fortunate enough to have their parents pay their way through tertiary education for them. While I had not one, but two degrees worth of Student Loans.

My walls were empty when I moved out on my own into my apartment and I said, ‘Why buy paintings when I can paint them myself?’. I officially started my company, GW Art with seasonal Collections, that has grown so much since then and still has some way to go.
I started to help a friend train her Boot camp (aerobics) class in 2011 too. She had to leave the country for a year and I did so well administering and training classes that I eventually branched out on my own. I got certified in both Personal Training and Sports Nutrition. After a timid start to do this on my own, I thrived by seeing positive results in my clients and being a part of and changing person’s lives. I am now confident and in demand in the Fitness Industry in Jamaica.

I currently find ways to express my 3 fields along with Hobbies, which include Restaurant Reviews, Sports and more on my Website, www.sugalifestyle.com. This continuously inspires me and makes me feel like I can branch out even more! #blackentrepreneurship #blackexcellence

Suga’s Healthy Salmon, Pesto Pasta and Homemade Creamy Sauce!

Enjoy Restaurant Style Salmon at home like Suga!

Ingredients

2 Salmon Fillets
Salt
Black Pepper
Olive Oil
Ashebre’s Spicy Dairy-Free Basil Pesto
Gluten-free/Whole Grain Thin Spaghetti
Cherry Tomatoes (Sliced)
Fat-Free Philadelphia Cream Cheese/Low-fat Greek Cream Cheese
Onion
Garlic powder
Grated Parmesan Cheese
Almond milk/Skimmed milk

*I didn’t get the chance to purchase Capers, but for those who like Capers with Salmon, it is not needed with the strong taste of Ashebre’s Spicy Dairy-Free Pesto sauce

*Ashebre’s Spicy Dairy-Free Pesto can be sourced at John R. Wong Supermarket, Kingston Ja

Method (Serves: 2)

Salmon Fillets

1. Tilt the Salmon fillet up/Lift and bend it to make several slits on the skin side of the Salmon with a very sharp knife. (This makes the Salmon cook quicker, the skin crispier and does not let the Salmon curl up in the heat)

*Don’t slice too deep or you will overcook the Salmon

2. Season the Salmon with Salt and Black pepper

3. Lightly grease frying pan with Olive oil over medium heat

4. Place Salmon fillets in pan skin side down to prevent overcooking

3. Look out for a distinct white line in the middle of the fillet at about 3 to 5 minutes, depending on the thickness of the Salmon. When you see it, the Salmon is cooked halfway through

4. Flip the Salmon and cook for another 3-5 minutes until the skin is crispy.

5. Turn off the heat, cover the pan and steam your Salmon for about 10 minutes to be cooked medium. Add an extra 2-3 minutes to cook medium-well.

Pasta

1. Cook Thin Spaghetti until tender and drain in coriander.

2. Add sliced Cherry tomatoes and mix in some of Asbebre’s Spicy Dairy-free  Pesto Sauce.

Creamy Sauce

Make your own healthy version of a Creamy Sauce instead of using an Alfredo sauce or Coconut cream sauce to put on your Fish or your Pasta.

Melt olive oil, garlic powder, onion, cream cheese, grated parmesan cheese and almond/skimmed milk in a pot, with varying amounts to create your desired consistency.

Plating

Plate Spaghetti with Salmon fillet on top. Add a little Pesto sauce to the Salmon and layer your homemade creamy sauce on top. Yum!

Healthy and Savoury Yam Toast topped with Avocado for Breakfast!

If you’ve been eating Whole Wheat, Whole Grain or Gluten-free Bread since the start of 2018 and you would like a change, then this is the Recipe for you!

You could be a Vegetarian looking for an exciting new Recipe too.

Ingredients

1 Yam (Complex/Good Carbs)

1/2 Avocado (Healthy Fats)

1 tsp Hemp/Sesame seeds (Protein)

Asparagus (Vegetables)

Olive Oil (Optional)

A sprinkle of Garlic Salt (Optional)

A sprinkle of Black Pepper (Optional)

A pinch of Pink Himalayan Sea Salt

Method

Yam Toast

● Cut 1 large Yam into even slices (around 2cm thick)

● Place in the Oven at 220°C for 30 minutes OR Place on a Grill for 30 minutes on each side on medium-high heat

Roasted/Steamed Asparagus *(Edited by Gabrielle Burgess)

Roasted:

● Preheat oven to 220 °C

● Place the Asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with garlic salt, and pepper

● Bake in the Pre-heated oven until just tender, 12 to 15 minutes depending on thickness.

Steamed:

● Fill a skillet with ½ cup of water per ½ pound of Asparagus and Add the Asparagus.

● Cover the skillet with a lid and Boil over medium-high heat for about 5 minutes or until the Asparagus turns bright green and tender.

Avocado/Avocado Puree *(Edited by Gabrielle Burgess)

● Mash the Avocado with a fork or puree in a blender until smooth, adding water if necessary to reach desired consistency

● Top off the Yam slices with Avocado, Hemp/Sesame seeds, Asparagus and a pinch of Pink Himalayan Salt.

Benefits

A Fibre and Protein-rich Breakfast with Veggies and Healthy Fats all at the sane time!
