Chorlavi’s by Nella Davis Stewart out of St. Ann, uses less sugar and more local organic fruit, herbs and vegetables to create a tasty variety of Pepper Jellies and Jams. No preservatives and no additives.
Nella used to be a caterer, so can demonstrate how well her Jams and Jellies pair with meats.
Where did she get the name Chorlavi’s?
Nella went to eat at Haciendo Chorlavi, a hotel in the hills of Ecuador about 20 years ago. They have a love story similar to Lover’s Leap in Jamaica and she fell in love with the place.
When Nella went to register her business’s name as Gems, in honour of her mother, the name was aready taken. So she went with Chorlavi’s!
What’s Suga’s fave from Chorlavi’s?
I love the Pineapple, Mango and Carambola Pepper Jellies. They were balanced in terms of tasting the fruit, the spicy and the sweet.
I love the Otaheite Jam too.

Pairings for serving on crackers:
Tamarind Coconut and Peanut butter, all Pepper Jams with cheeses, Tamarind Pepper Jam with smoked meats.

I regretfully admit that I have had Chef Dave Paul’s contact information and Lunch menu from last summer and just decided to use it yesterday. Why? It’s so hard for me to decide what to eat, much less from the day before. I am also still working or just settling in by the time the order is to go in.
Last year, Lunch orders had to be in by 10pm the night before and currently, the deadline is even earlier. Orders need to go in to Chef by 8pm the night before. I am sure this is how he keeps his system structured, so it’s either you make it work for you or you don’t.
A set menu is used daily, which is updated from time to time. Customized lunch orders are welcomed. Customers have options of Seafood, Chicken, Pastas, Wraps, Salads and Vegetarian meals.
It is stated that Punctual delivery is not guaranteed. So even though I requested an 11:30am delivery, I stated that it could not be later than 12Â noon. My lunch arrived at 12 noon.
Presentation and branding were impressive. Communication was also effective.
I asked for light Jerk BBQ sauce and got just that. It gave the tender and well-seasoned Chicken a zesty flavour. The Sweet Potato and Pumpkin Mash was satisfactory. Sometimes healthy is boring and I took one of the healthier side options, so didn’t expect much from it as a side. The raw vegetables in the side Salad were fresh and I loved the added crunch and sweetness from a few cuts of gimbilyn (a.k.a carambola/star fruit) and raisins.
To top things off, lunch came with a moist towelette. I am guessing that Chef Paul knows that his Chicken was saucy and finger-licking good.

To go completely healthy, you can substitute the Pepper Jack Cheese with Borden’s Fat-Free Pepper Jack Cheese that can be found at Wal-Mart or with another spicy, flavourful Fat-Free Cheese of your choice based on availability.

I have been following Angela Davis on Instagram, who is a self-taught home cook, recipe developer, private chef and author located in Maryland, D.C.
She had a Sunday Dinner Party two weekends ago, titled ‘Christmas in July’. It was also hosted by Clinton Mitchell and his wife. There were 12 guests, who were a mixture of followers, friends and clients that hit it off quickly and had rave reviews, using the hashtag, #KitchenistaSundays on Instagram.
The Dinner was the Feast of 7 Dishes with an Italian Seafood theme. The prelude included Crostinis with anchovy butter and radishes, an Italian Seafood salad, a Vegetable salad and stuffed Clams.
A slow roasted pistachio crusted Salmon followed for the main course. A guest said it was the best Salmon they have ever had.
All of that was topped off with Roasted figs along with whipped goat cheese and a Lemon Olive Oil Cake.

Trevanne Donegal for The Layer Cake was a Table Talk Jamaica Observer Food Awards 2014 Nominee for Outstanding Baker. She may not have copped the award this year but she is definitely one to watch. I believe at the rate she is going she may even be nominated for Caterer of the Year in due time.
The quality of the food she produces and the high level of service and standards she upholds are a delight to see and experience. Perhaps this was influenced by the fact that she actually started her career front of house then pursued Culinary studies and found her way into the kitchen with no turning back. Her family is setting up a Restaurant on Old Hope Road and that is also something to look out for.
She does a layered Carrot Cake that is out of this world and all of the lunches I have ordered from her have been spot on in terms of the flavours she is able to bring out in her food with a lovely presentation. She has the ability to combine cheeses in various combinations in true gourmet fashion.
Some items that she caters for lunch are Buffalo Chicken Sandwiches, Burritos, Fajitas, Paninis, Cinnamon Cake, Mexican Blackened Snapper, Soups and ofcourse her signature deluxe Carrot Cake stacked with decadent New York style Cheesecake topped with a white chocolate vanilla whipped cream.

The Layer Cake went World Cup crazy with an Italian menu last Friday. It’s a pity the Italian fans could not celebrate a victory and the deliciousness!!!
The Italian Stuffed Chicken Meal-
Tender and succulent breast of chicken stuffed with roasted garlic, fresh basil, olive oil roasted tomatoes and a classic 3 cheese combination of fresh mozzarella, aged parmesan and mild cheddar. Drizzled with a spicy marinara sauce. Served with an orzo garden salad and a herb rice pilaf.
This tasted just like how it sounded, ABSOLUTELY Spectacular.
Cost: $1200JMD and they deliver!
After popular demands I cannot wait to see what is in store for this week and next week, will it be French or Brazilian?!
